Chalet Kale CLusters

* Absolutely the best kale clusters we have ever made!  Our nephew Sam used both hands to gobble these tasty, healthy treats!!!


Massage 1 bag of organic kale with a blend of the following ingredients.  (The kale pictured is lacinado kale.  Any type of kale will work, but we prefer curly kale because the kale clumps and makes clusters.  Hence the name, "Kale Clusters".

Place all ingredients in food processor or Vitamix to achieve desired consistency which should neither be pasty nor runny.

Cashews (3 or 4 ounces)   Soak raw cashews about 30 minutes - 1 hour before blending if desire nuts to enhance digestion.
1/4-1/2 cup  nutritional yeast
1 medium red onion
1/2 - 1 cup apple cider vinegar


Optional seasonings to taste (1- 2 t tamari or soy sauce, 1 t cumin, 1 t  tumeric, 1/4-1/2  chili or red pepper flakes)

Set dehydrator to 105-115 degrees

Place in dehydrator for approximately 6 hours or until crisp.

The results are amazing: sweet and cheesy all without sugar, oil or excess salt.  Onion actually sweetens as it slow roasts in the dehydrator.  There is NO bitter onion flavor!  ....and NO greasy residue!!!

* Yield greatly diminished  due to repeated taste testings:)   Watch this kale disappear VERY quickly....it might not last 24 hours!!!  How much kale should one person consume??!?!  It is easy to hit the upper limit on this one!
