Vegan Fruit Cobbler

6 cups of fresh or frozen fruit such as cherries, berries

1/2 sugar

2 cups + 1 Tablespoon flour  (I used all purpose and coconut)

1/4 cup rolled oats

2 teaspoons  non-aluminum baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup milk (almond, soy, cashew or coconut)

1/4 cup coconut oil (melted)

1 Tablespoon vinegar

1/4 teaspoon vanilla

1/4 teaspoon rose water

1/4 teaspoon cinnamon (if using apples or pears)

Toss  fruit with sugar along with 1 T flour, vanilla and rose water.  Pour in a 9 x 13 baking dish.  Allow fruit to thaw.

Preheat oven to 350

Wisk 2 cups of flour, baking power and baking soda.   Set aside.

1/2-1 frozen banana thawed and thinly sliced

In a separate bowl, wisk milk, banana,  oil and vinegar.  Reserve a little oil to drizzle on top

Combine wet and dry ingredients until sticking together.  Do not over blend.

Drop mixture by spoonfuls over the fruit and top with oatmeal.  Drizzle with remaining oil.

Bake for 30 minutes then increase to 375 and cook for 5-10 minutes until topping is cooked to desired consistency.
